Q&A: When you order your Chinese food steamed, do they still mix oil into the sauce?

Question by catlady: When you order your Chinese food steamed, do they still mix oil into the sauce?
We always order from the “health” section of the menu, usually steamed chicken or shrimp with garlic sauce on the side. But is there still a ton of oil in the sauce?

It does not seem too oily, but if you put left over sauce in the fridge it sure congeals. Is that oil or corn starch?
